Apple Crumb Cake with Black Scottie Apple Wassail
 

Ingredients
3 cups all purpose flour
1 cup firmly packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup buttermilk

1 teaspoon vanilla extract
1 cup applesauce (unsweetened if desired)
1 small Granny Smith apple diced into small pieces
2 tablespoons unsalted butter, melted
2 eggs, lightly beaten
2 egg whites, lightly beaten
Black Scottie Apple Wassail Concentrate as desired for drizzle
 

Crumb Topping
2/3 cup all purpose flour
2/3 cup firmly packed brown sugar
1 teaspoon ground cinnamon

2 tablespoons melted butter
2/3 cup chopped walnuts
2/3 cup quick-cooking oats
 

Directions
Preheat oven to 350 degrees. Line the wells of a 12 well muffin pan with paper liners or spray with non-stick cooking spray & dust with flour. Can also be baked in a 9x13" cake pan.

In a large bowl, combine 3 cups flour, 1 cup brown sugar, 1 tsp cinnamon, the baking powder, baking soda, salt and nutmeg. Whisk to combine.

In a medium bowl, combine the buttermilk, vanilla extract, applesauce, diced apple, 2 Tbls melted butter, eggs and egg whites. Whisk to blend.

Make a well in the center of the flour mixture. Pour the milk mixture into the well. Stir until dry ingredients are just moist. Spoon the batter into the prepared pan.

In a separate medium bowl, combine walnuts, oats, 2/3 cup flour, 2/3 cup brown sugar, 1 tsp cinnamon and 2 Tbls melted butter. Stir with a fork until mixture is crumbly. Sprinkle evenly over top of the batter in pan.

Bake for 15 to 20 minutes or until a wooden pick inserted near center comes out clean.

Cool for 15 minutes. Remove paper liners before serving. Drizzle BLACK SCOTTIE APPLE WASSAIL CONCENTRATE on a dessert plate, put the muffin or cake square on the plate and drizzle again over the top.

Serve with a cup of hot Black Scottie Apple Wassail or Black Scottie Chai and ENJOY!!
